AOC Côtes du Rhône Rosé 2005 :

Serving temperature : 10° to 12°C (50-54°F)
Tasting : The color is a very pretty pale pink recalling wild roses. The nose happily combines fresh fruits and mild spices. When tasting, the wine harmoniously blends balance, freshness and a full body and a taste of forest berries (Black currant…).
Aging potential : To be enjoyed as of now to take advantage of the freshness of the aromas.
Recommended dishes: It can be enjoyed with pleasure served chilled for an aperitif. It can be associated in harmony with Mediterranean or exotic cuisine but also with white meats and grilled meats.
Terroir : This very fruity Côtes du Rhône comes from rigorously selected plots on angular rocks (named places: La Clapette, Le Moulin d’Aure, Le Clos de Buisson) in order to obtain an ideal balance between sugar and acidity.

- 55% Syrah
- 45% Grenache
Serving temperature: 16° to 18°C (60-64°F)
Tasting : The color is full of brightness; the nose smells good with hints of small wild fruits. When tasting, it expresses its tenderness. A taste of forest berries with a hint of licorice can be found in the well-rounded and silky tannins.
Aging potential: To be enjoyed as of today in order to take advantage of the freshness of the aromas.
Recommended dishes: Cold cuts, white meats, beef but also soft curd cheeses
Terroir : This very fruity Côtes du Rhône comes from rigorously selected plots on angular rocks (named places: La Clapette, Le Moulin d’Aure, Le Clos de Buisson) in order to obtain an ideal balance between sugar and acidity.

- stemming at the plot
- temperature controlled (20°C)
- rapid devatting to extract the fruity aromas and to give it tenderness
- matured in vats

Description of the Cuvée André 2005 :
Grape varieties:
- 60% Syrah
- 40% Grenache
Serving temperature: 16° to 18°C (60-64°F)
Tasting : A cuvee with an intense bouquet of very ripe black berries livened up by hints of spices. Full-bodied, ample, savory when tasting, it is accompanied by very high-quality tannins.
Aging potential: 2 to 7 years.
Recommended dishes: Game, stew, cheeses.
Terroir : This Côtes du Rhône is produced rigorously selected plots on rocky areas, on the named places called “Le clos de Buisson and La Martine” in order to obtain an ideal balance between sugar and acidity.
Vinification :
- stemming on site
- fermentation 11 days (pumped over, 2 to 3 times per day)
- maceration for 5 days
- malo-lactic fermentation
- devatting and racking
- produced in French oak casks (12 months)
